Under the effect of infrared, similar to the natural radiation of embers, pressureless steam forms in the glass casserole dish (not airtight) to cook and brown at low temperature at less than 100°C. Low temperature cooking preserves the natural taste, mineral salts are 100% preserved, natural food sugars are 97%, sugars in desserts are reduced by 20 to 50%, the sugar content for jams is 5 % to 10%. No more salt, fat and added sugars!
