Very low in calories (with around 30 Kcal for a small 100 mL bowl), gazpacho is nevertheless ultra-concentrated in vitamins and minerals: it includes magnesium (8.9 mg per 100 g) and potassium (210 mg per 100 g), but also beta-carotene (a precursor of vitamin A) and vitamin K (K1, in particular).

The recipe for 2 people. In the bowl of a blender, put 4 ripe tomatoes, stripped of their skin, ½ seeded red pepper, ¼ cucumber, 2 tbsp. to s. extra-virgin olive oil, ½ clove of garlic and a pinch of salt. Mix to obtain a very smooth velvety consistency. Enjoy very fresh.
This diet gazpacho can be enjoyed with a nice slice of toast (for example: wholemeal bread or sourdough bread) and/or with an egg (for example: soft-boiled, soft-boiled, scrambled or fried) per person .
