The inescapable roll cake recipe
Ingredients
- 4 eggs
- 120 g of sugar
- 100g of flour
- 1 pinch of salt
- 40g cooled melted butter
- 1 jar of strawberry or raspberry jam
The recipe
- Preheat the oven to 180°C (th. 6).
- Crack the eggs, separating the whites from the yolks. Whisk the yolks with the sugar until the mixture whitens, then add the flour, salt and melted butter while stirring.
- Beat the egg whites until stiff, incorporate them into the preparation, lifting it so as not to crush the egg whites. Pour everything onto a silicone baking sheet (installed on the oven rack) so as to obtain a regular and thick rectangle of about 1 cm.
- Smooth the surface with a flexible spatula and cook for 10 to 15 minutes, watching.
- Slightly dampen a clean tea towel, spread it out on the work surface.
- When the biscuit is cooked, turn it over on the tea towel and roll it up on itself. Leave to cool for a few moments then unroll and garnish with jam. Roll it again then cut the ends so that you have a clean cut.
Tips for success
- A Flexipan-type silicone edged plate is the best. Failing that, grease a sheet of parchment paper with 10 g of butter and place it on a baking sheet. To unmold, turn the biscuit over on the moistened cloth, gently grease the paper and continue as indicated in the recipe.
- If you are using a mold with a silicone rim, be sure to place it on the oven rack BEFORE pouring the preparation. We saw some who then tried to slide their mold on the oven rack… We won’t tell you the rest.
How to Revisit the Roll Cake
Spread : replace the jam with spread (without palm oil).
Strawberry way : we garnish the biscuit with fairly thick pastry cream (vanilla, chocolate, etc.), place fruit cut into pieces (strawberries, cherries, etc.) and roll up.
Lighter: replace the jam with fairly thick homemade applesauce.
Apricots-almonds : garnish the biscuit with apricot jam, sprinkle with lightly roasted slivered almonds and roll up.
Chocolate-orange : garnish the biscuit with orange marmalade. Once rolled, it is coated with melted chocolate. Allow to harden before slicing.
