The basic marble cake recipe
Ingredients for a cake tin
- 240g flour
- 2 tbsp. baking powder
- 165g icing sugar
- 4 eggs
- 165 g very soft butter + a little for the mold
- 2 tbsp. bitter cocoa
- 1 knife tip vanilla powder
There recipe
- Preheat the oven to 150°C (th. 5)
- Dissolve the bitter cocoa in 3 to 4 tbsp. tablespoons of hot water, so as to obtain a paste.
- With a fork, coarsely mix the butter and sugar, then beat the mixture with an electric whisk. Add the eggs one at a time, beating well between each addition.
- Finish by adding the sifted flour to the baking powder.
- Separate the dough in two, add the vanilla in one of the halves, the dissolved cocoa in the other.
- Pour the pasta into the buttered mold, starting with half the plain pastry, then half the chocolate pastry, the rest plain and the rest chocolate.
- Draw the marbles with a wooden spoon then cook for around 45 minutes (a knife inserted in the middle should come out dry). Let cool before unmolding.
5 versions of marble cakes that change
With pistachio : replace the chocolate with 2 tbsp. pistachio paste.
Matcha-chocolate : add 2 tbsp. teaspoon matcha tea powder in plain batter.
Chocolate-banana : blend 1 banana, incorporate it into the plain dough.
With candied orange : cut a quarter of candied orange into small cubes (or even chop it) and add it to the chocolate paste.
Chocolate-hazelnut topping : to put the cake on a wire rack and coat with melted dark chocolate (top and sides). Immediately sprinkle with chopped hazelnuts and leave to set.
