The waffle recipe
The ingredients for about fifteen waffles
- 200 g flour
- 30 g of sugar
- 4 eggs
- 1 sachet of baking powder
- 25g melted butter, cooled
- 25 cl of semi-skimmed milk
- Salt
Recipe
- Mix the flour, salt and baking powder.
- Add the sugar, the egg yolks and the melted butter, mix quickly then add the milk little by little, avoiding the formation of lumps.
- Whip the egg whites and add them delicately to the preparation.
- Bake the waffles in the waffle iron, oiling the plates between each round to prevent the waffles from sticking.
Vegan waffles
Mix 250 g of flour, 30 g of sugar and 1 sachet of baking powder. Incorporate 50 g of melted vegetable margarine then 35 cl of almond milk. Bake in an oiled waffle iron.
Lactose-free waffles
Replace the milk with a vegetable juice (almond, rice, soya …). Instead of melted butter (although it contains only traces of lactose and can still be tolerated by most people with intolerance), use 2 tbsp. to s. an unflavored oil, such as grapeseed or sunflower seed oil.
Gluten-free waffles
Mix 75 g of chestnut flour and 75 g of rice flour, 1 pinch of salt and 1 sachet of baking powder gluten free. Add 30 g of sugar, 1 beaten egg, 2 tbsp. to s. sunflower oil and dilute with 25 cl of semi-skimmed or vegetable milk. Leave to stand for 1 hour then cook in an oiled waffle iron.
A recipe for slimming waffles
Whisk 2 eggs with 125 g of compote apples smooth, 1 pinch of salt, 275 g of flour and 2 tbsp. to c. baking powder. Add 40 cl of semi-skimmed or soy milk. Bake in an oiled waffle iron.
