The basic recipe for shepherd’s pie
The ingredients for 4 people
- 800g potatoes
- 2 onions • 20 g butter
- 20 cl of beef broth
- 500 g of beef (stew leftovers) • 40 cl of semi-skimmed milk
- 2 tbsp. at s. olive oil
- 4 tbsp. at s. breadcrumbs • Parsley
- Salt pepper
Recipe
- Peel the potatoes, cook them for 30 minutes in salted water.
- Drain, pass them through a vegetable mill, add the hot milk and the butter. Salt, pepper.
- Melt the peeled and thinly sliced onions in the hot oil, add the shredded beef and the broth.
- Leave to simmer for 10 minutes, stirring regularly, remove from the heat and add the parsley.
- Preheat the oven to 200°C (th. 6-7). In a gratin dish, spread a thin layer of mashed potatoes, cover with meat, then add the rest of the mashed potatoes and finish with the breadcrumbs.
- Bake for 15 mins.
A vegetarian shepherd’s pie
Coarsely chop 500 g firm tofu or 150 g textured soy protein (organic stores) previously rehydrated and cook like beef.
The slimming version
Prepare a “light” mashed potatoes with 400 g of potatoes, adding 400 g of celeriac or cauliflower, then season with a dash of soy cream.
Shepherd’s pie with more antioxidants
Use sweet potatoes (same preparation) instead of potatoes. Season them with a little turmeric powder, a dash of olive oil and freshly ground pepper.
The cholesterol-lowering version
Replace the butter in the mash with 1 tbsp. at s. of olive oil, the beef with 500 g of cooked and crumbled salmon meat, and the breadcrumbs with ground almonds.
