Ingredients

1 bush endive

1 bunch of radish

2 tablespoons oil

vinegar

2 spring onions

200 grams chestnut mushrooms

100 grams of shiitake

50 grams of walnuts

250 grams whole grain ravioli (without meat, cooled)

pinch of oregano
Preparation
- Clean the endive and the radish.
- Cut the endive into thin strips and the radishes into quarters.
- Whisk together a dressing of 1 tablespoon oil, 1 tablespoon water, some vinegar and pepper. Mix the dressing through the vegetables.
- Wash the spring onions and cut them into rings.
- Clean the mushrooms and cut them into slices.
- Roughly chop the walnuts.
- Cook the ravioli according to the instructions on the package.
- Gently fry the spring onions in the rest of the oil.
- Add the mushrooms and sauté for 5 minutes, stirring.
- Season with pepper and some oregano.
- Mix the mushroom mixture into the drained ravioli and sprinkle over the walnuts. Add the salad.
