Preperation
• Peel a pear, remove the core and mix it with 10 cl of mineral water and the sugar. Immerse the grapes in simmering water, drain and peel them delicately.
• Swell the gelatin in very cold water. Boil the white wine with the split vanilla pod. Flame it.
• When there are no more flames, remove the vanilla pod, add the drained gelatin and the mixed pear. Mix.
• Pour into transparent cups and let set for 2 hours.
• Meanwhile, slice the remaining pears using a mandolin to obtain very thin slices. Remove the core of the pear using a cookie cutter and gently place the slices on a non-stick baking sheet. Sprinkle lightly with icing sugar through a sieve and dry in the oven at 100 ° C (th. 3/4) for 1h to 1h15 so as to obtain fruit “chips”.
• Decorate the cuts with peeled grapes and pear slices, serve immediately.
