The recipe for homemade vanilla ice cream
Ingredients
- 50 cl of semi-skimmed milk
- 5 egg yolks
- 150 g of sugar
- 1 vanilla pod
- 20 cl of whipping cream
Recipe
- Split the vanilla pod, collect the grains with a knife and put them in a saucepan with the milk, the pod and 100 g of sugar.
- Bring to a boil, remove from heat, let infuse 1 hour.
- Whip the rest of the sugar with the egg yolks. Remove the vanilla pod, heat the milk again and pour it while whisking over the yolks.
- Transfer everything to the saucepan and thicken, whisking until thickened.
- Remove from the heat, let cool, then set in an ice-cream maker. Or, failing that, in a container placed in the freezer, stirring every 30 min with a spoon to homogenize the preparation.
Vanilla lactose free ice cream
Instead of milk, we opt for a vegetable drink (coconut milk, rice milk). The good idea is to use a mixture of equal parts of the two. And we replace the whipping cream with soy whipping cream (organic stores).
Light version vanilla ice cream
It is prepared with 100 g of agave syrup and 800 g of 0% (lighter) or 3% (smoother) cottage cheese. To which we add the vanilla beans, and the split pod. The mixture is then taken in a container in the freezer, stirring every 30 min with a spoon to homogenize the preparation. We taste immediately!
Vegan vanilla ice cream
25 g of cornstarch are diluted in 25 cl of coconut milk which is poured into 50 cl of rice milk, with 150 g of brown sugar and the grains of a vanilla pod. Then heat, stirring until thickened, and let cool. Then, we go into an ice cream maker (or we put it in the freezer).
Vanilla ice cream without egg
Mix 2 pots of vanilla dessert cream (commercial) and 20 cl of whipped cream with 50 g of sugar. It is then taken in an ice cream maker or in the freezer.
