The basic vanilla ice cream recipe
Ingredients
- 50 cl semi-skimmed milk
- 5 egg yolks
- 150g sugar
- 1 vanilla pod
- 20 cl whipping cream
Recipe
- Split the vanilla pod, collect the grains using a knife and put them in a saucepan with the milk, the pod and 100 g of sugar.
- Bring to the boil, remove from the heat, leave to infuse for 1 hour.
- Whisk the rest of the sugar with the egg yolks. Remove the vanilla pod, heat the milk again and pour it, whisking over the egg yolks.
- Transfer everything to the saucepan and thicken, whisking until thickened.
- Remove from the heat, let cool, then set in an ice cream maker. Or, failing that, in a container placed in the freezer, stirring every 30 minutes with a spoon to homogenize the preparation. Enjoy after 3 hours.
The tips for success
- Buy fresh milk, much tastier than UHT milk. It changes everything.
- Of course, you can use extract of vanilla liquid to flavor the ice. But the small black grains of the vanilla pods are so pretty in the cream, and much more fragrant.
- Whether it stays more than 3 hours in the freezer, the ice house becomes much harder than a ice industrial: necessarily, you have not added air or emulsifiers. Take it out about ten minutes before serving it.
Lactose free vanilla ice cream
Instead of milk, we opt for a vegetable drink (coconut milk, rice milk). The good idea is to use a mixture of equal parts of the two. And we replace the whipping cream with soy cream (organic stores).
How to revisit your homemade vanilla ice cream
light version: it is prepared with 100 g of agave syrup and 800 g of 0% (lighter) or 3% (more creamy) fromage blanc, to which we add the vanilla beans and the split pod. The mixture is then placed in a container in the freezer, stirring every 30 minutes with a spoon to homogenize the preparation.
vegan version: mix 25 g of cornstarch in 25 cl of coconut milk which is poured into 50 cl of rice milk, with 150 g of brown sugar and the grains of a vanilla pod. Then heat while stirring until thickened, and let cool. Then, we pass in an ice cream maker (or we put in the freezer).
Version without egg : mix 2 jars of vanilla dessert cream (from the store) and 20 cl of whipped cream with 50 g of sugar. Then set in an ice cream maker or in the freezer.
Gourmet version: at the end of turbining, add crumbs of chocolate cake, broken meringues or raisins previously soaked in rum.
