Ingredients

4 stewed pears, cleaned and cut into pieces

juice of 1 lemon

6 grams of gelatin

1 egg white

1 dl whipped cream

30 grams of sugar

2 apples, cleaned and diced

2 mandarins, cleaned

150 grams strawberries, cleaned and cut into pieces

mint leaves for garnish
Preparation
Boil the stewed pears with half of the lemon juice and let it simmer until soft. Blend the pears into a puree. Soak the gelatin in cold water. Bring 50 ml of water to the boil, squeeze out the gelatin and dissolve in the boiling water. Mix this with the pear puree and let it cool. Beat the egg white until stiff. Whip the cream stiff with the sugar. Fold the egg white and cream into the semi-cooled pear puree. Let this set in the fridge.
Mix the apple cubes, mandarin segments and strawberry pieces and let the fruit salad cool in the refrigerator.
Serve the dessert in glasses: fill them halfway with the fruit salad. Make balls of the pear mousse with an ice cream scoop and place them above the fruit salad. Decorate with mint leaves.
