Preparation
Clean and slice the mushrooms; Sweat them in a non-stick pan, without fat, until they have given up their water.
Add the diced ham, let them brown for a few minutes then pour in the soy cream and pepper.
In each pancake (see buckwheat pancake dough recipe), cut 3 discs about 12 cm in diameter with a cookie cutter. reheat them for a few moments, in a pan, arrange three per plate then garnish them with the preparation. Serve immediately.
Health tips
Mushrooms are real slimming allies when they are cooked without fat (otherwise, they behave like real sponges and easily absorb quantities of oil).
For “plants”, they also provide a good dose of protein (from 2 to 3 g on average per 100 g).
