What symptoms should alert?

Listeria can also be fatal in elderly or fragile people (suffering from cancer, on dialysis or transplant recipients). In fact, the mortality rate reaches 30 or 40% for cases of listeriosis.
Can we recognize a contaminated product?
Foods contaminated with Listeria retain same look, same taste and same smell than normal. It is therefore impossible to recognize a product infected with Listeria. The foods concerned can be fruits, vegetables, dairy products, cheeses, meats, cold cuts, smoked fish, raw shellfish…
“The bacteria can contaminate all stages of the food chain by colonizing food manufacturing sites. As it is sensitive to heat, it is in principle absent from cooked and preserved foods, unless contamination occurs after cooking. Because of its ability to multiply at low temperatures, Listeria is often present in refrigerated foods with a long shelf life.“, further specifies the government.
