200 grams of whole wheat flour

100 ml buttermilk (at room temperature)

1 level teaspoon salt

25 grams of melted butter

For the filling:

250 grams onions

250 grams leek

250 grams of raw ham

2 tablespoons butter

grated nutmeg

350 grams umer

3 egg yolks

2 tablespoons whole wheat flour

finely chopped parsley

Preparation
Place the whole wheat flour in a bowl and make a well in the center. Crumble the yeast into it and add the buttermilk. Mix well and let it rise covered for 15 minutes. Then add the remaining ingredients for the dough and knead everything well. Then let it rise for 20 minutes.
Meanwhile, prepare the filling. Cut the onions and leek into thin rings and the ham into cubes. Heat the butter in a large pan, fry the ham and add the vegetables. Then fry the mixture for 5 minutes while stirring. Add nutmeg, salt and pepper to taste.
