The combination of goat cheese and spinach is delicious
Pumpkin is delicious in a quiche. Complete with goat cheese and spinach.

Ingredients
- 600 grams cleaned pumpkin
- 1 red onion
- 1 garlic clove
- 5 tablespoons of olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 225 grams of cottage cheese
- 225 grams of flour
- ½ teaspoon chili flakes
- 4 eggs
- 4 tablespoons of milk
- 100 grams of soft goat cheese
- 100 grams fresh spinach
- 1 quiche mold of about 24-26 cm in diameter
Prepare
- Preheat the oven to 200°C. Cut the pumpkin into cubes. Peel the onion and garlic and cut the onion into thin wedges and the garlic into pieces. Mix the onion, garlic and pumpkin with 2 tablespoons oil, cumin and coriander. Put everything on a baking tray lined with baking paper and bake the pumpkin in the oven for 15 minutes.
- Meanwhile, make the dough from the quark, flour, 3 tablespoons oil, chili flakes and a little salt.
- Line the quiche tin with the dough. Poke some holes in the bottom with a fork. Beat the eggs with the milk. Divide the cheese into small pieces.
- Remove the squash from the oven and immediately toss in the spinach in a bowl. The spinach is wilting. Divide the pumpkin mixture over the quiche dough.
- Divide the cheese over it, pour the egg mixture on top and bake the quiche in the oven for about 30 minutes until done and light brown.
Delicious with a cucumber salad with yogurt dressing.
