The basic recipe for quiche Lorraine
Ingredients for 4 to 6 people
- 200g flour
- 100g butter
- 200g smoked bacon
- 20 cl fresh cream
- 20 cl semi-skimmed milk
- nutmeg, salt, pepper
Recipe
- Mix the flour and the diced butter with a little salt and water, so as to obtain a smooth and homogeneous paste. Leave to rest for 2 hours in the fridge, then roll it out and line a pie tin.
- Preheat the oven to th. 6 (180°C). Brown the bacon in a frying pan then drain on absorbent paper.
- Prepare the egg cream: break the eggs and beat them into an omelet with the fresh cream and the milk, barely salt, pepper, add the bacon bits and a little nutmeg.
- Pour the cream over the bottom of the pie and bake for around 40 minutes.

Gluten-free quiche Lorraine
Use rice flour instead of wheat flour. The dough will then be more crumbly. The trick to rolling out the dough without breaking it: place it on a sheet of parchment paper, flatten it by hand, cover with a sheet of stretch film then roll it out using a rolling pin. Peel off the film and install the dough, still on the parchment paper, directly in the mould. Tap with your fingertips to make it hug the edges.
Lactose-free quiche Lorraine
Cream and milk are rich in lactose: they can be replaced by vegetable equivalents (soya, almond, etc.) or by delactosed creams and milks (Minus L, in supermarkets).
Butter contains almost no lactose, which is not a problem.
Slimming Quiche Lorraine
Use skimmed milk and low fat 8% cream. Replace the lardons with bacon fillet cut into matchsticks.
Quiche Lorraine anti-cholesterol
Prepare the dough using 5 tablespoons of olive oil instead of butter. To replace the egg cream, mix 300 g of silken tofu with 20 cl of cooking soy cream, 30 g of cornflour, salt and pepper. Instead of smoked bacon, prefer dices of defatted white ham.
