200 grams of hot smoked salmon fillet

60 grams grated young cheese

2 tablespoons crème frache

1 low flat quiche tin with a diameter of 24-26 cm
Preparation
- Make a dough from the quark, flour, 3 tablespoons oil and a little salt.
- Line a quiche tin with the dough. Poke some holes in the bottom with a fork.
- Clean the broccoli, divide it into florets and the stem into pieces. Boil the broccoli for 3 minutes, drain and allow to cool slightly. Place the peas in a colander or sieve and pour over some boiling water. Let them drain well. Divide the salmon into pieces and cut the spring onion into rings. Beat the eggs with the crème frache, salt and pepper.
- Mix the broccoli, peas, cheese, spring onion and salmon and divide this over the dough base. Pour the egg mixture on top and bake the quiche in the middle of the oven for about 25 minutes until done and lightly browned.
Delicious with lettuce with a vinaigrette.
