Preparation
- Tear off the leaves of the bok choï, rinse them as well as the bean sprouts. Cut the chicken breast into strips. Bring the vegetable broth to a boil, immerse the bok choi leaves in it for 3 minutes.
- Divide the chicken, shrimp, bean sprouts and bok choï leaves between bowls, pour the broth over and sprinkle with cilantro. Leave to rest for a few minutes before serving.
Health tips
Bok choi is mostly found in Asian grocery stores, and like its cabbage cousins, it’s super light in calories and high in antioxidants. If you can’t find one, replace it with chopped Chinese cabbage leaves.
