Fancy something tasty? Then make these delicious carrot cake coconut balls. Ready in no time and responsibly too!
Ingredients

1 winter carrot (about 150 grams)

200 grams dates, pitted (preferably medjoul)

175 grams hazelnuts or almonds

1 teaspoon biscuit spices

2 teaspoons freshly grated ginger

25 grams coconut (+ some extra to roll in)
Preparation
- Finely grate the winter carrot. Put all ingredients in a food processor (keep 25 grams of the nuts) and let it run until you have a solid mass.
- Chop the reserved nuts very finely. Roll the date-carrot mass into small balls. Roll them in the coconut or chopped nuts.
- Store the balls in a sealed container until use.
Tip: also delicious with other types of nuts.
