How do you make carrot cake? It’s very simple. Watch the video.

Oven time: 1 hour
Requirements: greased springform
Ingredients
- 200 grams of winter carrot
- 2 eggs
- 125 ml sunflower oil
- 100 grams caster sugar or honey
- 300 grams flour (spelt if desired)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon powder
- 100 grams of hazelnuts
Preparation
- Preheat the oven to 180 C. Finely grate the winter carrot (a food processor is useful for this).
- Split the eggs. Stir the oil with the caster sugar or honey and 2 egg yolks.
- In another bowl, mix the flour with the baking powder, cinnamon and carrot. Chop the hazelnuts. Stir them into the carrot mixture. Stir in the oil mixture as well.
- Beat the egg whites until stiff and fold them into the batter. Add a few more tablespoons of water if the batter seems very dry.
- Transfer the batter to a springform pan and bake the cake for 1 hour.
Tips
- Vary with nuts: try walnuts or pecans.
- Delicious with a spoonful of sour cream.
