Eating well during the menopause while reducing the problems associated with it. This is a version of the classic Lebanese salad. Tabbouleh goes great with grilled fish and vegetables and is delicious as an appetizer (served on crispy iceberg lettuce leaves). Also great for barbecues or picnics, as it keeps its flavor and texture and doesn’t fade like leafy salads.
Ingredients

175 grams bulgur

1 tablespoon olive oil

1 tablespoon of linseed oil

juice of 3 lemons

2 cloves garlic, finely chopped

freshly ground sea salt and black pepper

2 large carrots
-
2 courgettes
-
small stalk of broccoli

115 grams of peas
-
small bunch of mint, finely chopped, plus a few leaves for garnish

large bunch of parsley, finely chopped, plus a few leaves for garnish

225 grams of ripe juicy tomatoes, skinned, the stems removed and cut into pieces

1⁄2 cucumber, diced

1 tablespoon yellow linseed

4-5 spring onions, finely chopped
Preparation
Place the bulgur in a large bowl and pour over enough warm water to cover. Let soak for 20 minutes. Drain the bulgur well, squeeze out excess liquid and place in a large serving bowl.
Mix both types of oil with the juice of 2 of the lemons and the garlic. Season this dressing with salt and pepper and pour it over the bulgur. Mix everything well and let it sit for another 20 minutes.
Bring a large pot of water to the boil with some salt. Cut the carrots, courgettes and broccoli into approximately equal sized pieces. Place the peas and the chopped vegetables in a blanching basket and hang it in the boiling water for 1 minute. Shock the vegetables in cold water and then drain.
Just before serving, mix the chopped mint and parsley into the salad, along with most of the tomatoes, cucumber, linseed, blanched vegetables and about two-thirds of the spring onions. If necessary, season the salad with salt, pepper and lemon juice (it should taste quite sharp).
Garnish with the rest of the tomatoes and spring onions and the whole mint and parsley leaves.
