Preparation
- Brush the sweet potato and dice it. Wash and drain the spinach.
- Steam the diced sweet potato for 10 minutes then add the spinach on top.
- Turn off the heat and leave it covered.
- In a frying pan, brown the garlic and onion with the spices in the olive oil.
- Stir and, after 2 minutes, add the coconut milk.
- Add the vegetables to the pan and toss to coat them.
- Salt lightly and serve immediately.
