Slimming program: light sauces from Yves Toublanc

The mayonnaise sauce:
2 lukewarm hard-boiled egg yolks
1 yogurt 0%
Chives
1 teaspoon of sweet mustard
1 pinch of sherry vinegar
1 teaspoon of lemon juice
1 pinch of salt and pepper
Beat the yolks and yogurt, pass through a sieve, add the condiments.
Light bearnaise sauce
2 egg yolks
6 tbsp of vinegar
1 shallot, chopped
4 tbsp cold water
2 tablespoons of 0% cottage cheese
1 tablespoon of tarragon
Reduce the shallot in the vinegar and tarragon. Off the heat, add the cold water and the 2 yolks. Whisk and thicken without boiling for 5 minutes. Add the cottage cheese and serve hot.
To prepare your low-fat sauces, eliminate sources of fat, replace with 0% dairy products and brighten it up with condiments.
Slimming program: at the table
Whether at a restaurant, with friends or at home (simpler), eliminate the little things that make the difference. Bread, butter and alcohol are to be banned from your meals.
