Long and spicy pod
Long beans are a vegetable that is not yet widely used in Dutch cuisine. And that’s a shame, because this pod is nice and spicy and also good for your eyes.
What is it?
Long beans are a vegetable that is widely used in Surinamese cuisine. The green pods are 15 to 25 centimeters long and they resemble stretched green beans, but the taste is slightly spicier. Garter originates from tropical areas in Asia, Africa and South America. In the tropics, such a pod can grow up to a meter in length.

Long beans contain six times as much zeaxanthin as an average vegetable, and twice as much lutein. These are both antioxidants that are good for the eyes. They protect against the harmful effects of UV light. Lutein and zeaxanthin are found in the yellow spot (macula) in the retina, the focal point of the eye lens. Bee macular degeneration the yellow spot will gradually deteriorate. In the Netherlands, this eye disease is the main cause of vision loss in the elderly. Research shows that lutein and zeaxanthin can counteract or delay this condition.
What should you pay attention to when buying garter?
Basically the same as with green beans: the pods should not be limp, but juicy and firm.
How do you store garter?
You can store the pods in a dark, cool place for several days. Not in the fridge; this tropical vegetable may discolour.
How do you prepare it?
Garter beans also resemble green beans in terms of cleaning and preparation. Remove the tips and if necessary the stiff threads, cut the pods into pieces of 3 to 4 centimeters and cook them for about 15 minutes. Braising or stir-frying is also possible.
