Deliciously seasoned
Ingredients

1 small pumpkin (about 800 grams)

1 small onion

Piece of ginger root (1 inch size)

2 tablespoons raisins

2 tablespoons oil

1 teaspoon grated orange peel

½ teaspoon paprika powder

½ teaspoon ground coriander (ketumbar)

½ teaspoon ground cumin (djinten)

¼ vegetable stock tablet with less salt

1 cinnamon stick

150 grams of whole-wheat couscous
-
1 red pepper
-
10 sprigs of coriander
Preparation
- Wash the pumpkin. Cut the pumpkin into pieces and remove the threads and seeds. Cut the pumpkin pieces into cubes.
- Peel the onion and cut it small.
- Peel the ginger and grate it finely.
- Wash the raisins.
- Mix 1 tablespoon of the oil with the grated orange zest, the paprika, a pinch of the ground coriander and a pinch of the ground cumin. Mix the oil through the pumpkin and put it in a pan. Braise the pumpkin for about 10 minutes.
- Bring 300 ml of water to the boil with the piece of bouillon tablet.
- Heat the rest of the oil and fry the onion and spices until they start to smell.
- Add the couscous and pour in the stock. Loosen the grains with a fork and let the couscous swell for 10 minutes with a lid on the pan.
- Clean the pepper and cut it into thin rings.
- Wash the coriander and chop it small.
- Mix the cooked pumpkin, the raisins, the pepper rings and the chopped coriander with the couscous.
- Replace the raisins with strips of dried apricot, fig or dates.
Menu suggestion
Delicious with chicken breast strips.
