Preparation
- Cook the pasta in a saucepan of salted boiling water al dente (about 8 minutes). Drain, pass them under a stream of cold water and let cool.
- Whisk the oil, vinegar and mustard in a bowl. Defrost the shrimp in a pan without adding fat and remove them as soon as they are pink. Whisk the olive oil, lemon juice and mustard.
- In a salad bowl, combine the shrimp, pasta, cherry tomatoes cut in half, the flesh of the avocado cut into cubes, the arugula and the minced onion tail. Add the vinaigrette, pepper and mix gently.
