This recipe makes about 12 muffins.

300 grams of pumpkin

1.5 cup oatmeal

50 grams of hazelnuts

10 dates

2 eggs

1 glass of orange juice (fresh)

2 tablespoons gingerbread spices

2 teaspoons chia seeds

1 tablespoon honey

1 vanilla pod

1 teaspoon baking soda

Preparation
- Cut the pumpkin into half moons and remove the seeds and threads. The peel can simply be eaten, so peeling is unnecessary.
- Cut the pumpkin into cubes and cook for 20 minutes.
- Preheat the oven to 160°C.
- Put almost all oats, hazelnuts, orange juice and baking soda in the food processor and grind everything.
- Then add the cooked pumpkin, the dates, eggs, honey and the gingerbread spices.
- Scrape the marrow from the vanilla pod and place it in the food processor as well.
- Finally, add a pinch of salt and mix to a homogeneous mixture.
- Spoon the mixture into the muffin tins, sprinkle with some oat flakes and chia seeds and bake them in the middle of the oven for 50 minutes.
