From Dutch pot to cauliflower pizza
It is the brother of the broccoli and a typical Dutch vegetable: the cauliflower. Many people see cauliflower as an old-fashioned Dutch pot, but this is changing. Why? Because it is healthy, cheap and creative possibilities have arisen with cauliflower.
Just like kale, Brussels sprouts and broccoli, cauliflower belongs to the cruciferous family. The standard white cauliflower is not the only type of cauliflower. There are also orange, green and purple cauliflowers.
Nutritious and low in calories
The white cauliflower itself is very healthy. Cauliflower is rich in vitamins such as vitamins B, C and K.
Cauliflower also contains a healthy dose of calcium, other minerals, antioxidants and fiber. The calcium is mainly in the green leaves of the cauliflower. You can eat the green leaves raw and use them in a salad, for example. The minerals that are abundant in cauliflower in addition to calcium are phosphorus and potassium.
The cooking time matters
You prefer to retain as much of the vitamins and minerals of the cauliflower as possible. This often goes wrong when preparing cauliflower. Today we have found out that nothing could be further from the truth. By cooking briefly (about five minutes), most vitamins and minerals are retained. It is also possible to eat cauliflower raw.
What should you pay attention to
You prefer to buy the tastiest cauliflower available. Note the color and structure of a cauliflower. The best cauliflowers have a beautiful white color and a well-closed structure.
You can keep a cauliflower in the fridge for about a week. If you choose to keep the cauliflower out of the fridge, it will keep for two or three days. It is also possible to freeze a cauliflower. To do this, clean the cauliflower, cut the white part into florets and blanch the florets. You can then keep the cauliflower frozen for 12 months.
What can you do with cauliflower
The possibilities are endless. It always remains an option to cook the vegetables and serve them as a real Dutch pot with potatoes and meat. It is possible to give this a twist by serving the cauliflower with curry or tomato sauce instead of cheese sauce. Processing the cauliflower in a savory pie or stewing with other vegetables is also very tasty.
There are a number of options for getting creative with the cauliflower:
- Dip the cauliflower through fritter batter and fry.
- Serve the florets with a dipping sauce as a snack.
- Process the cauliflower in a salad, this can be done with both the florets and the leaves.
- Making a cauliflower pizza base. Such a bottom is also for sale in large supermarkets.
