Cauliflower boring and trite? No, it is not. With cauliflower you can do more than you think. And cauliflower is a perfectly healthier low-carb alternative to, for example, potatoes, couscous and rice.
Cauliflower is available all year round. In the summer months it comes from Dutch soil, in the winter from countries like Spain. Because cauliflowers have a long shelf life, they do not have to be transported by plane. This versatile vegetable provides you with few calories and is full of vitamin C, B vitamins, minerals such as calcium, iron and zinc as well as fiber.

potatoes
Replace all or part of the potatoes with stew or mash.
Rice
Grind the cauliflower in a food processor or finely grate the cauliflower. Fry an onion with some garlic and fry the cauliflower for 2 minutes.
couscous
Start with ground cauliflower and mix it with the Moroccan spice mix ras el hanout, some garlic and lemon juice. Serve raw or stir-fried.
Pizza Bottom
Press the liquid out of 1 ground cauliflower and mix this with 1 egg, 50 grams of grated cheese and possibly some flour. Spread out like a pizza base on a baking tray with baking paper and bake for 10 minutes at 200 °C before you cover it like a pizza and bake it further. The full recipe find you here.
Savory pie dough
Use the pizza base ‘dough’ as a base for a savory pie. Bake for 10 minutes before adding the filling.
How long can you keep cauliflower?
Cauliflower can be kept in the fridge for at least a week. Store it in the crisper drawer and leave the leaves attached. This keeps the cauliflower fresher for longer.
