Ingredients

4 eggs

1 onion

1 green pepper

½ cauliflower (approx. 400 grams)

3 tablespoons curry paste

½ can of diced tomatoes
-
200 ml coconut milk
-
Fresh coriander
Preparation
- Hard boil the eggs for 10 minutes, shock and cool. Peel the eggs.
- Peel and dice the onion and cut the bell pepper into cubes. Clean the cauliflower and divide it into florets. Cut the stems into pieces.
- Heat the curry paste in a frying pan and sauté the onion and bell pepper for a few minutes. Add the cauliflower and fry for a while. Add the diced tomatoes and coconut milk and let it simmer gently until the cauliflower is tender. Cut the eggs into wedges and toss them through the curry. Finely chop the coriander and sprinkle it over the curry.
- Serve with naan bread or brown rice.
