Preparation
- Remove the ends of the zucchini then cut them into cubes. Peel the onions and cut them into quarters.
- Heat the oil in a pan and brown the onions and zucchini, 10 to 15 minutes, until golden brown. Lightly salt and pepper.
- Meanwhile, put the gizzards in another pan and brown them for about 10 minutes. Discard the rendered fat.
- Brown the almonds in a non-stick pan without letting them darken.
- Add the drained gizzards to the zucchini as well as the slivered almonds.
