Ingredients

1 shallot, chopped

¼ cucumber, peeled and cut into small pieces

7 tomatoes, 2 of which cut into small cubes

1 clove garlic, crushed

1½ tablespoon dried chervil

3 tablespoons vinegar

1 dl olive oil

salt and pepper

400 g zucchini, shaved into wafer-thin slices

a few leaves of lettuce
Preparation
Puree the 5 whole tomatoes until smooth. Mix the smooth tomato mass with the cucumber pieces, shallot, crushed garlic clove, chervil, tomato pieces and vinegar.
Add the olive oil while stirring, pouring very slowly. Add salt and pepper to taste and let this gazpacho infuse overnight.
Slice the zucchini into wafer-thin slices and place them side by side on 4 plates. Spoon the gazpacho over the zucchini and let it marinate for an hour. Garnish the plates with the lettuce leaves.
