A day without meat is sometimes tasty and also good for cholesterol levels. This couscous with cheese, vegetables and nuts is delicious with a green salad.
Ingredients

• 1 onion

• 2 cloves of garlic

• 2 red pointed peppers

• 1 zucchini

• 3 tablespoons of oil

• 2 tablespoons curry powder

• 1 box of green peas
-
• 1 heaped teaspoon ginger grater (jar)

• 400 grams of couscous
-
• 1 herb stock cube
-
• 100 grams of unsalted cashew nuts

• 100 grams of grated spicy 30+ cheese
Preparation
• Cut the onion, garlic, peppers and zucchini into small pieces
• Heat the oil
• Fry the onion and garlic
• Add the bell pepper and zucchini
• Add curry powder and ginger grater
• Add the couscous and fold it through the vegetables together with the green peas
• Add 8 dl water and the herb stock cube and stir everything
well mixed
• Bring everything to a boil and leave it on a very low heat, with
put the lid on the pan, cook in 7 minutes
• Season the couscous with the nuts and cheese.
