Preparation
- Bring a pot of water to simmering with the bay leaf. Dip the chicken breasts in it and leave to poach for about 15 minutes. Drain and let cool.
- Meanwhile, dice the tomatoes and remove the seeds.
- Pour the 50cl of water into a saucepan, mix in the agar-agar, salt and bring to the boil. Lower the heat and heat for 1 to 2 minutes, stirring constantly.
- Cut the chicken breasts into slices, arrange them alternately with the diced tomatoes in a terrine, then cover with the agar-agar mixture. Leave to cool then place in the refrigerator for at least 3 hours.
- Turn out onto a dish and decorate with basil leaves and pink berries. For a complete dish, serve with a green salad and brown rice or quinoa.
