Love Thai dishes? Then you should really try tom kha kai soup! This is a delicious, spicy chicken soup based on coconut milk.
Ingredients

1 piece fresh ginger (4 cm)

a bunch of fresh coriander

2 stalks of lemongrass

3 tablespoons fish sauce

juice of 2 limes

1 can coconut milk (400 ml)

250 g organic chicken breast

200 g snow peas
-
1 red or green pepper
-
3 spring onions
Preparation
- Peel the ginger root and cut into slices. Put this together with the stalks of the coriander and the lemongrass in a liter of water and bring to the boil.
- Add the fish sauce and lime juice. Remove the coriander stalks from the soup and add the coconut milk (400 ml). Cut the chicken breast into strips.
- Clean the snow peas and cut them in half. Add the chicken and snow peas to the soup and cook for a few minutes. Cut a green or red pepper (without seeds) and 3 spring onions into rings and stir them through the soup.
- Remove the ginger slices and lemongrass from the soup and ladle the soup into large bowls and garnish with chopped coriander leaves.
Delicious with some prawn crackers or naan bread!
