Jackfruit is a great meat substitute. You can also make satay very well.
Ingredients

1 can of young jackfruit (on moisture)

1 shallot

1 clove of garlic

2 tablespoons coconut oil

2 tablespoon lemon juice

1 tablespoon honey
-
1 teaspoon turmeric
-
2 tablespoons soy sauce
-
pinch of sambal
-
8 skewers

1 tablespoon oil
-
2 spring onions
Preparation
- Drain the jackfruit and cut it into pieces of about 2-3 cm.
- Chop the shallot and garlic.
- Heat the coconut oil in a pan and sauté the shallot and garlic on low heat for 1-2 minutes. Turn off the heat and add the lemon juice, honey, turmeric, soy sauce and sambal.
- Mix well and pour over the jackfruit. Let the jackfruit marinate in the refrigerator for at least 1 hour.
- Thread the jackfruit onto skewers.
- Heat the barbecue or a grill plate, grease the plate or the grid with 1 spoon of oil and roast the jackfruit satay for 5-10 minutes until brown.
- Cut the spring onions into rings. Serve the satays with a spoonful of peanut sauce and sprinkle with the spring onions.
