Queen’s soup is a real Dutch classic: a creamy, tasteful soup that you can eat as lunch or appetizer (possibly on King’s Day)!
Ingredients

35 grams of butter

35 grams of flour

1 liter chicken stock

2 winter carrots

dash of (soy) cream

fresh parsley or chervil
Preparation
- Melt the butter in a pan and stir in the flour. Heat this mixture gently for 1 minute. Keep stirring.
- Add 300 ml chicken stock and stir well with a whisk so that the flour-butter mixture dissolves. When you have a smooth mass (stir really well!) add another 700 ml chicken stock. Stir well again.
- Grate the winter carrots. Add this to the soup and cook the carrot strips in the soup for 5 minutes.
- Season the soup with salt and pepper and a dash of (soy) cream.
- Sprinkle some finely chopped chervil or parsley over the soup before serving.
