Preparation
- Salt and pepper the meat. Wrap it in cling film and put it in the freezer for 1 hour.
- Brown the hazelnuts in a non-stick pan, watching them: they must not darken. Wait for them to cool and then crush them.
- Remove the meat from the film, put it on a board and cut it into thin slices.
- For even thinner slices, place them between two sheets of cling film and roll them out using a rolling pin.
- Brush four plates with olive oil using a brush.
- Divide the slices of meat on the plates. Whisk the olive oil, lemon juice and basil, season with salt and pepper.
- Sprinkle it over the carpaccios, sprinkle with crushed hazelnuts and serve immediately, very fresh.
