Ingredients

2 tablespoons oil

1 onion, coarsely chopped

1 large winter carrot, sliced

150 grams celeriac, diced

4 potatoes (200 grams), coarsely chopped

400 grams Brussels sprouts, cleaned

1 vegetable stock tablet, crumbled

1 bay leaf

2 tablespoons dried thyme

400 ml dry white wine

1 bag (75 grams) hazelnuts

Optionally 4 slices of whole wheat bread
Preparation
Heat oil in frying pan. Saute onion and carrot for 2 minutes. Add celeriac, potatoes and Brussels sprouts and fry for 3 minutes. Add broth tablet, bay leaf and thyme. Add wine and bring everything to a boil. Simmer gently for 30 minutes with the lid on the pan.
Toast hazelnuts in a dry frying pan until golden brown. Let the nuts cool and roughly chop on a cutting board. Season Brussels sprouts stew with salt and pepper. Remove bay leaf. Divide the vegetables with a little stew between 4 deep plates. Sprinkle with hazelnuts. Delicious with wholemeal bread or else increase the amount of potatoes to 400 grams.
