The man recently opened his own restaurant, with a menu consisting of all the foods he advises against his patients such as lamb chops, burgers, cheese or fried chicken! His restaurant, The Warren, which opened at the end of October in New York City, makes the doctor a “Dr Jekyll and Mr Hyde”!
After studying medicine, Dr Chattoo specialized in the diagnosis and treatment of various disorders related to the stomach and digestive system such as stomach pains, acid reflux, irritable bowel syndrome, Crohn’s disease and food poisoning.
The doctor serves the foods he advises against his patients!
He is therefore used to berating his patients for their bad eating habits. “They drink too much alcohol, too much coffee, eat late at night … And all of these things are risk factors forindigestion, acid reflux and heartburn, “says the doctor.
He advises against eating spicy foods due to their high acidity and high-fat dishes like fried chicken, cheese, red meats, creamy desserts and butter. But when it comes to planning what to serve the Warren, instead of practicing what he preaches, Dr Chattoo listens to his instinct, which often yearns for rich dishes …
“From a business standpoint, people want decadent, good things,” he admits. On the menu of his pub-inspired half-bistro restaurant, we find dishes such as a hamburger topped with cheddar, gruyère or roquefort, cold meats, cheese, fried chicken … What to come with anti-acids ! Spicy foods, he says, like jalapenos (the Mexican variety of chilli pepper) and cayenne (another type of chili pepper) contain capsaicin – an active component that can irritate the lining of the stomach and cause gastritis and ulcers.
The doctor has developed a balanced menu
But the doctor insists that he has developed a balanced menu, with controlled portions. This is the case with poutine, a Canadian dish made with fries, cheese and gravy. Here it is served in a dish smaller than a bowl of cereal. Thus, customers can find the flavor of this fairly rich recipe without exaggerating the quantities.
The menu also includes a lot of healthy options like steak tartare, salad and mustard seeds; grilled octopus with cauliflower; the pan-cooked chicken, served with parsnip, wild mushroom and a mixture of fig juice. “It has a very low oil content,” notes Chattoo.
“My favorite dish: the pancake made with wild mushrooms, ricotta and truffle oil …”, concedes the doctor who does not consider his new job as a restaurateur as a job but rather as a pleasure. But as in everything diet healthy, “you can eat almost anything as long as you do it in moderation,” he says.
