Preparation
- Peel the sweet potatoes, cut them into cubes. Melt the equivalent of 4 tbsp. to s. in 1 tsp. to s. of oil with a few diced red peppers, in a skillet, until tender.
- Sprinkle with cumin. Meanwhile, heat the rest of the oil in a saucepan. Add the onions, the rest of the pepper, the spices and the curry paste. Sauté for 1 minute.
- Add the sweet potato cubes, cover with water and simmer for 15 minutes. Mix the vegetables with the coconut milk (keep 2 tbsp), and the cooking water until you get the ideal consistency.
- Serve in bowls, divide the sweet potato “croutons”, a dash of coconut milk and sprinkle with coriander.
