Preparation
- Peel the sweet potatoes and cut them into pieces. Peel and slice the garlic and onion. Heat half the oil in a casserole dish, brown them then add the ginger and the sweet potatoes. Salt and pepper. Cover with water and cook, 20 to 30 minutes, until the sweet potatoes are tender. Drain the vegetables using a skimmer, mix them with the milk then add a little cooking water to obtain the ideal consistency.
- Heat the rest of the oil in a nonstick skillet. Add the shrimp and brown them over low heat for a few moments. Sprinkle them with coriander then mix.
- Pour the soup into bowls, divide the shrimp and serve immediately.
