Preparation
- Cook the rice according to the instructions on the package.
- Hard boil the eggs. Peel them and cut them into wedges.
- Clean the leek and cut the vegetables into rings of about 2 centimeters.
- Wash the tomatoes and cut them into wedges.
- Heat the oil in a wok or frying pan and stir fry the leeks with the curry and ginger powder.
- Add the lemon juice and the tomato segments and stir-fry the dish for a few minutes.
- Add the egg segments at the last minute and warm them through.
- Roughly chop the cashew nuts and sprinkle over the nuts. Add the rice.
