Preparation
- In a salad bowl, mix the shrimps, olive oil, Espelette pepper and the peeled and pressed garlic clove. Leave to marinate for 30min. Meanwhile, prepare the sauce: mix the egg yolks, the mustard and the vinegar, then add the yogurts. Mix to obtain a creamy sauce and put in a ramekin. Preheat the plancha. Cook the shrimp 1 to 2 minutes on each side. Sprinkle with finely chopped green chilli. Serve immediately with the sauce and lime slices.
