Preparation
- Clean the leeks, slice them finely. Steam them for 15 minutes.
- Meanwhile, peel and slice the onion. Heat the oil in a casserole dish or a tagine dish and brown the onion, then add the spices, raisins and tomatoes. Salt and pepper and cook for 20min.
- Place the monkfish slices in the casserole dish and cook for another 10 minutes by turning them halfway through cooking (do not let them overcook, as the monkfish will become hard and rubbery).
- Serve immediately with the leeks.
