An easy meal for four.
Ingredients

1 jar of kidney beans (200 grams), rinsed

Olive oil

2 medium onions, cut into rings

2 garlic cloves, finely chopped

100 grams chorizo sausage, cut into pieces

2 avocados

1 tablespoon lemon juice

Black pepper

A few leaves of coriander or flat-leaf parsley

Hot sauce (e.g. Tabasco)

4 thick slices of country bread
Preparation
Heat a dash of olive oil in a frying pan. Fry the onion rings until golden brown, add the garlic at the last minute and fry for a minute. Add the chorizo and fry until golden brown. Add the beans and heat them briefly, mix everything together.
Remove three quarters of the shortening and collect it in another frying pan. Add a dash of olive oil and fry the slices of bread until golden brown on both sides. Top the bread with slices of avocado. Sprinkle the avocado slices with some lemon juice. Divide the beans with chorizo and onion over the avocado. Season with black pepper and the coriander or flat-leaf parsley and drizzle with the hot sauce.
