2/3 white and 1/3 yolk, the egg is an excellent source of protein and two antioxidants from the carotenoid family: lutein and xeaxanthin. The egg provides approximately 300mg of cholesterol per day, which corresponds to the recommended nutritional intake per day. Eggs also contain many vitamins: vitamin A, D and E as well as B vitamins (B2, B5, B9 or folate, B12). The following trace elements and minerals are also present: selenium, in significant quantities, phosphorus, zinc, sodium and potassium.
