This is how you keep it as healthy as possible
A nice fries or croquette, in itself nothing wrong with that. But how can you prepare these types of snacks as healthily as possible?
A simple potato with can be a true delicacy. Fry for a few minutes and enjoy. It is better to pay a little more attention to that frying, because you can do it in different ways: unhealthy and in a healthier way. Below a short instruction ‘healthy frying’.
Fat or oil?
To start with: you can indeed fry in all kinds of ways, but it is always fat. Now you have different types of fat: wrong, saturated fat and healthier, unsaturated fat. So it is wisest to fry in unsaturated fat. Solid frying fat, such a large lump of fat, is therefore not recommended. But liquid cooking fat, olive oil (but not “extra virgin”) and sunflower oil are fine choices.
How hot?
Frying at too high and too low a temperature is not good. Too low means lower than 150 degrees Celsius. In such a case, the fries absorb too much oil, making them very greasy. The taste will also be less. Above 175 degrees, the fries can become too hot again, causing the outside to burn and the inside to not be cooked properly. In addition, at a very high temperature, a lot of acrylamide can be formed, a substance that can be harmful to your health. A temperature of 175 degrees is therefore ideal. Your fries will not become too greasy, will be well cooked and contain less acrylamide.
How long?
Do not fry longer than necessary. That sounds simple, and it is. The packaging lists the preparation times, stick to them, again to prevent too much acrylamide formation. The following applies to homemade fries: stop frying when they are golden yellow in color.
How often?
Eat a varied diet, so fry in moderation. Use thicker fries, they absorb less fat than thin fries. Frying in the oil or fat can be done about 5 to 7 times, then it is time to replace everything. Replace oil or grease sooner if its smell becomes very strong, the color darkens or if it starts to smoke. Do not top up used oil or grease with new oil or new grease.
Oven
Oven fries are prepared without fat. Make sure you actually prepare these in the oven. Oven fries contain more sugars, and when you fry them, the acrylamide content becomes unnecessarily high. Incidentally, cooking in the oven does not mean that no acrylamide formation takes place at all. Therefore, also follow the instructions on the packaging here.
Outdoors
If you make it completely easy on yourself and get some fries from the snack bar, look or ask for the Responsible frying logo. This logo guarantees that the tent in question uses liquid fat for frying, and therefore no solid fat with its many saturated fats and trans fats.
