Preparation
- Rinse and wring out the watercress, remove the larger stems. Cut the melon into quarters, remove the seeds then the rind, and cut the flesh into cubes. Cut the avocados in half, remove the pits and peel them. Cut the flesh of an avocado into cubes, lemon them. Combine the melon, avocado and watercress (or lamb’s lettuce) in a bowl.
- Mix the flesh of the second avocado with the rest of the lemon juice and olive oil.
- Salt and pepper the chicken breasts. Steam them for 10 to 15 minutes then cut them into slices. Serve them on a bed of mixed salad and serve the avocado sauce on the side.

The strong point of watercress: its richness in chlorophyll which boosts the production of red blood cells, and which promotes the production of enzymes with detoxifying power. To be replaced out of season with arugula or lamb’s lettuce.
