With this sandwich you get enough protein.
Ingredients

1 slice of brown bread

extra virgin olive oil

1 small avocado

lemon juice

splash of regular vinegar

1 fresh egg

a little lamb’s lettuce or baby spinach

sea salt

black pepper
Preparation
- Bring a pan of water to the boil.
- Lower the heat so that the water is just about to boil and pour in a good splash of vinegar. This ensures that the protein solidifies quickly.
- Stir the water with a spoon at the same pace, creating a mini vortex in the middle.
- Then immediately grab an egg, break it and let the entire egg ‘fall’ quietly into the vortex. You will see that the egg turns and the whites solidify around the yolks.
- Let the egg cook for 2 to 3 minutes for soft-boiled and 4 to 5 minutes for completely set.
- Then carefully remove it from the pan.
- While you wait for the egg, brush the slices of bread with some olive oil and toast them under the grill or in the toaster.
- Cut the avocado in half and remove the pit.
- Scoop out the flesh and cut into thin strips.
- Sprinkle a little lemon juice over this.
- Place the toasted bun on a plate and place the lettuce or spinach and the avocado strips on it. The poached egg goes on top of this.
- Season with sea salt and some black pepper.
